Doing dinner right on a weeknight

Load up on the fruits and vegetables. Surprise your taste buds by trying something new like adding a passionfruit sauce to turn a simple fruit salad into something exotic. Or how about making a healthy, creamy, guacamole with some wholemeal pita chips?

Our Fall Favourite Butternut Squash Soup

Serving:

2 people

Time in the JTC OmniBlend:

3-6 minutes

Ingredients: 

250 ml warm water with a chicken or vegetable stock cube

250 g butternut squash – peeled, deseeded & chopped

3 tbsp low fat crème fraiche

1 tbsp olive oil

½ medium onion

1 carrot

2 garlic cloves

salt & pepper to taste

Method:

1. Place all the ingredients in the JTC OmniBlend jug and secure the lid.

2. Use the High function to blend all the ingredients for 3-6 minutes. Use the tamper tool if needed.

3. Garnish the soup with a drizzle of fresh cream and serve with toasted, buttered, buns.
