Thai Style lamb chops

Lamb chops are a barbecue favourites and this easy Thai style marinade comes together in a jiffy. Serve with a light green salad for added flavour.

  • 4 lamb chops, fat trimmed
  • Mint leaves, to garnish

For Marinade

  • 2 lemongrass, chopped
  • 1 handful mint, chopped
  • 4 cloves garlic
  • ½ tsp white pepper 
  • 1 inch thumb size galangal
  • 2 tbsp sugar
  • 4 tbsp coriander leaves, chopped
  • 4 t sp soya sauce
  • 1-2 Thai bird eye chillies
  • Salt to taste


  1. Pulse all the ingredients for the marinade using the 60 second preset timer until smooth
  2. Marinate the lamb chops for at least one hour.
  3. Cook lamb chops on a hot grill or barbeque. Serve with mint leaves garnish.
